Pumpkin Dark Chocolate Banana Bread
Who's ready for Halloween?! I am and I have this delicious recipe in tow. What a great way to satisfy this sweet tooth of mine. I have been munching on this yummy loaf all week for a breakfast side, dessert topped in homemade mixed nut butter recipe: here, and for a snack. I may not like bananas, but I certainly love myself banana bread. This isn't just an ordinary banana bread recipe, it's amped up with pumpkin giving an awesome fall flavor. For added a-PEEL, I sliced a banana in half and placed on top. I hope you all enjoy this simple fall inspired recipe.
Ingredients:
2 ripe bananas (mashed)
2 eggs (room temp.)
1/3 cup coconut oil (or vegetable oil)
1 1/3 cup canned pure pumpkin
1/2 cup honey
1/2 cup sugar
2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp pumpkin pie spice
1 tsp cinnamon
1/2 cup roughly chopped dark chocolate (I used Ghirardeli)
How to:
Pre-heat oven to 350 degrees and spray a 9x5 in. loaf dish with non-stick cooking spray.
In a large bowl combine mashed bananas, eggs, coconut oil, pumpkin, honey, and sugar and stir until smooth.
In a medium bowl, combine flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon and stir.
Next add flour mixture into banana mixture until just combined. Don't over stir, this leads to a tougher end product for the bread.
Fold in chopped dark chocolate/chocolate chips.
Pour batter into prepared pan and place in pre-heated oven.
Bake for 45-50 mins until a toothpick inserted into center of loaf comes out clean.
Remove from oven and allow to cool for 10-12 mins before removing to a rack to cool.
