Almond Butter Protein Nibbles
Most days this girl needs some source of energy before heading out to the gym. In the past when I haven't had a pre-workout snack I find myself half way through my workout running out of gas and then subsequently cutting my workout short due to my insatiable belly growls. So now I know better and am prepared when I visit my adult playground! I love energy balls because the combinations are simply endless and I often don't make the same batch twice. I use the same base that consists of oats, nut butter, and a protein powder and from there is where the creativity starts! This recipe is one that has some serious staying power!
Dry Ingredients:
- 1 cup old fashioned oats
- 1 scoop vanilla whey (or any other preferred protein/flavor)
- 4 tbsp Organic Peanut Butter Powder
- 1 tbsp chia seeds
- 1 tbsp milled flax
- 1/4 c Bob's Red Mill Unsweetened Flaked Coconut
- 2 tbsp Enjoy Life Mini Chips
- 1 tsp cinnamon
- 1 medium very ripe banana (smashed)
- 6 tbsp Barney Butter Vanilla Espresso Almond Butter
Next, place parchment paper on a plate. Then I like to spray my hands with a bit of cooking spray, then scoop mixture up into spoonfuls to roll into balls. Once formed, place in the freezer for 10 mins then remove and enjoy! Store these in the refrigerator for up to a week!
But I must warm you, their pop-able nature makes it almost impossible to not gobble up these nibbles. This recipe makes 12 nibbles, but you can make them larger or smaller to meet your needs/likes.
