Banana Nut Breakfast Cookies


I am never one to skip breakfast, I ensure every morning I get up that I have adequate time to get a good meal in before heading out for the day. On days in which I am on campus (5 out of the 7), I normally eat things like oatmeal, toast, proats, overnight oats, cereal, or these bad boys. I made these this past meal prep sunday after not making them for a few months and I forgot how delicious and easy they are. They really are the simplest recipe and of course you can add in different favs such as peanut butter, chia seeds, milled flax, etc the possibilities are endless. This is a basic recipe, sometimes I even add goji berries and pumpkin seeds with some orange zest in the Fall or raisins too. 

Ingredients:

2 medium bananas
1/2 c old fashioned oats
1/2 c almond flour
1 tsp cinnamon
1/4 c chocolate chips (I used Enjoy Life Mini Chips)
1/4 c pecan pieces

1. Preheat oven to 350 degrees.
2. Prep a baking sheet with parchment paper or cooking spray
3. Smash bananas completely. Next, add in oats, flour, cinnamon, and mix throughly. Then fold in chocolate chips, pecans, and any other little goodies.


4. Drop by the spoonful onto prepared pan forming about 12 balls. Press to flatten slightly.
5. Place in oven and bake ~10-12 mins.


These always turnout perfect, you can whip them up in no time, and the ingredients are always things I seem to have on hand! It's a perfect snack for when my nieces or nephews stay over and they want something sweet to munch on! 



I will use these as a pre-workout or even a mid-day snack. This week I had them on hand between classes and they are just a nice little sweet treat. I may be taking some to Ann Arbor with me Friday when I go with a couple other students to the University of Michigan for their Nutrition Specialty Day.
