New Eats: Portobella Mushrooms
Coming in quite close to the end of the month! Here is March's New Eats series food, the portobello mushroom.
I personally love mushrooms and their "meaty" flavor. I'm always one to throw some in a sauté, salad, or on pizza! Normally when I pick some up, I let them sit in the sun for a bit for them to synthesize Vitamin D! Such an amazing thing that nature offers. Even though I've eaten mushrooms for years, I've never actually had a portobello before! They are such a great low energy dense food, meaning low calories and high in volume! One serving has about 11% of your daily value of fiber and is a great source of potassium, copper, thiamine, niacin, folate, and riboflavin! Not to mention they taste amazing and you can essentially add them to anything! I have blended mushrooms into sauces, tossed them into stir fries, and even simply enjoyed them sautéed with some avocado oil salt and pepper!
I purchased 3 at Kroger so I decided to prepare them 3 ways for dinner this week! Check them out below! I'd love to hear your favorite way to enjoy them, feel free to comment below!
After cleaning with a dry paper towel, I scraped out the gills of the portobello and removed the stem and then removed any remaining debris. Then I decided to marinate all 3 in a quick marinade I whipped up consisting of some avocado oil, balsamic vinegar, liquid amino, s&p, garlic, and onion powder for about 2 hours in the refrigerator. Then I set the oven at 400, and baked them cap side down for about 15-20 mins.
Above I topped this cap with 1 fried egg and some diced sautéed bell pepper and red onion.

This cap was topped with some Trader Joe's Vegan Kale Cashew Basil Pesto, some sliced up sun dried tomatoes in olive oil, with a sprinkle of Bob's Red Mill Nutritional Yeast on top.
This last one was the best! I topped this cap with more diced sautéed bell pepper and red onion, along with some baked chicken breast, garlic powder, and a sprinkle of mozzarella cheese!
I hope this has given some inspiration to try out some mushrooms! Some people even use them as a meat replacement for those vegetarians or vegans out there! If mushrooms are not your thing, try something new this next month. That's what this new eats series is about, I want to show easy and fun ways to try new foods and hopefully motivate you to get those taste buds out there!
