New Eats Series: Artichoke
This girl is on Spring Break and I can not tell you how amazing it feels! GOODNESS! This semester thus far has been a bit of a doozy, but I am making my way through it. Thankfully I have an awesome support system that keeps me calm in my craziest times and actually I have had so many wonderful people reach out to me via social media who I have never met before. It's so amazing how many people you can connect with over social media and it's crazy to think about! My husband recently had an amazing idea and I'm turning it into a blog post series, thanks Chris! He suggested we find a new produce item to prepare each month, which is such a great way to find new foods, but also add variety to our plates!
After heading to the grocery store, my coupon based shopping philosophy took over and we found 2/$5 artichoke hearts, which neither of us have ever cooked with or even purcahsed. I've had spinach and artichoke dip before, however that's my extent of contact with it. Never have I ever had it in it's whole form, so I was excited to have it as our selection.
Chris snipped the leaves on the ends, and sliced it in half long wise, placed it in a aluminum covered baking pan, drizzled some olive oil and sprinkled with salt and pepper, and baked it at 400 for 20 mins. When you go to eat it, you eat the nude fleshy part underneath by scraping it against your teeth to remove. It was a great new experience & we would definitely re-buy!
