Asparagus Sun Dried Tomato Pesto Pasta




I think I'm the only girl on the planet that doesn't love pasta! I was never the girl that wanted to go to Olive Garden for date nights or enjoyed piles of spaghetti before my high school cross country meets.   Enter PESTO.... your girl has fallen hard for this delicious Banza pasta tossed with basil pesto, sun-dried tomatoes in olive oil, slices of roasted asparagus, and a sprinkle of fresh parmesan. This has been replay for my lunches and dinners. It's so quick, easy, delicious, and filling! I paired it here with some power greens and haven't been able to stop. 

Ingredients:
1 box Banza Penna Chickpea Pasta
1/4 c pesto of choice
7-8 sundried tomatoes cut into slices
3 spears of aspargus
parmesan cheese block

How to:
1. Follow instructions on box, bring water to a boil. Boil entire box of Banza Penne Pasta for listed time. 
2. While penne is cooking, cut sun-dried tomatoes into slices, and cut asparagus into bite sized pieces. 
3. Once pasta is cooked throughly, drain briefly then place in a med-large wide mouth bowl. Add sun-dried tomato slices, asparagus, and pesto. 
4. Mix to coat evenly. 
5. Plate and grade fresh parmesean on top and enjoy! 

You can fancy this up with many more add ins such a cooked spinach, chicken, feta, zucchini noodles, etc. I love simple recipes that are simple and satisfying! Hope you all have a kick-ass week!
