Bonita Springs Getaway
After what feels like the longest consecutive two semesters of my life (thanks chemistry....), Chris and I decided to take sometime to enjoy ourselves after some serious life changes. Mine- significant two semesters of chemistry WOOF and his much greater. He has added an additional rating and can now fly multi-engine aircraft so he's moving on up and he did it in a short 2 months. I am beyond proud of him. Hard work = Major play time!
We flew down south to visit my mother in law in Bonita Springs, FL. Hello 90 degree days, sunshine, ocean breeze, and hot sand! This time next year I will only have one semester remaining of my undergrad and will have applied for my dietetic internship. So much to look forward to on this journey to become an RD.
This vacay was exactly what we needed before another busy hectic year!
On our trip we made it to Sanibel Island to enjoy some amazing Key Lime pie with live music, drinks, and of course delicious eats!
Chris and I weren't able to celebrate our second wedding anniversary due to our crazy schedules so we decided to save it for our trip! We went to an amazing restaurant in Naples called Bayside Grill in the Venitian Village. It overlooked the bay and we enjoyed some beautiful views along with delicious food. I ordered the mahi mahi with green beans and he ordered a pistachio encrusted snapper with potato hash and of course we ended the night with some local ice cream from Royal Scoops!
One of my favorite places that we visited was the Edison's Winter Estate, in Fort Myers. Not only did the acreage have amazing gardens, it also showcased a wide selection of Ford vehicles, to include the Model T, and Edison's research laboratory.

We also managed to visit with his family to enjoy an amazing meal from Bahama Breeze Island Grille: Grilled salmon topped with mango and pineapple salsa, mashed sweet potatoes, and green beans. I love how celebrations are centered around food. This is our amazing culture.
We also visited a few beaches off of Marco Island and then drove to Cabos Cantina Taco & Tequila Bar for lunch where I enjoyed this chicken rice bowl with a plantain that was to die for!
I can't remember a time that I have been this relaxed. It was quite the breath of fresh air this girl needed to awaken myself. I have some BIG plans for this upcoming summer, lots of recipes, travel, and business endeavors to explore! I plan on spending some serious time outdoors and with my nieces and nephews!

Another one of my favorite spots was Naples Botanical Gardens. I felt like a kid in a dream world. There were so many plants and foliage that I had never seen or heard of before.
