Peach Baked Oatmeal



Happy Wednesday all!!! I am having the best week ever! Loving my busy Summer thus far! I've been training, getting in quality time with the fam, working on things that have been on the back burner since the Spring semester, and just slowing things down. I got home from training early one morning and decided to make up some baked oats for the hubs and I. Warm and sweet- perfect way to start our day and can be stored in the refrigerator for up to a week! Perfect meal prep recipe idea.

Ingredients:

1 tbsp coconut oil
2 cups rolled oats
1 tsp baking powder
2 tsp cinnamon
pinch of salt
1/4 cup chopped pecans
1/2 cup diced fresh peaches
1 large egg
1/3 cup pure maple syrup
2 tsp vanilla extract
2 cups coconut milk (I used Trader Joe's- 16 oz)

How To:

- Preheat oven to 375 degrees. Grease a 8x8 metal pan
- In a large bowl, add oats, baking powder, cinnamon, salt, and pecans and mix completely.
- Pour mixture into baking dish and press to fit base of pan.
- Layer peaches on top and spread evenly.
- In a small bowl melt coconut oil then add egg, syrup, vanilla, and coconut milk. Whisk till     combined.
- Evenly pour liquid mixture over the pressed oats.
- Bake 30-35 mins.
- Remove from oven and let sit in pan for 5-7 mins before serving.




I paired a slice with some greek yogurt and frozen berries with a sprinkle of unsweetened coconut flakes. These turned out awesome and were so easy! Best part is, you can sub any fruit in the place of the peaches, we just chose to use them because they are in season. I would love to use some fresh berries or maybe a mix of berries and banana!
