Chocolate Chunk Cookies
Happy Monday all! How about this heat?! It's kind of funny to think in about 4 months, we'll be complain about the wind and cold, so I try to take nothing for granted even if it's a bit uncomfortable!! I can't believe it's July already, it's going to be the beginning of the semester before I know it. I've been concentrating on soaking in my summer break with lots of family time and yummy adventures in my pantry!
Onto a very serious question here, when it comes to sweet tooth savoring, are you Team cookie or team cake? I don't know about you, but I am a cookie gal over cakes or brownies. I decided to try a sugar cookie recipe and then added my own twist with some serious chocolate chunks for these massive chocolate chunk cookies! The husband loved them and they are easy and most of the ingredients you have in your pantry now! I made these for my sisters bachelorette party for a sweet treat. If you are looking to please, give these yummy cookies a try!
Ingredients:
1 cup butter (8 oz)
1 1/4 cup light brown sugar
3/4 cup sugar
2 1/2 cup all purpose flour
1 1/2 tsp salt
1 tsp baking soda
2 large eggs
2 tsp pure vanilla extract
2 cups (12 oz) dark chocolate chunks/dark chocolate bar pieces (I used Alter Eco Dark Blackout)
How To:
- In a medium bowl, whisk flour, salt, and baking soda.
- In a separate microwave safe bowl melt butter, mixing every 15-30 seconds till fully melted.
- Add white and brown sugar into butter dish, whisk vigorously for about 1 min. Next, whisk in 1 egg till fully mixed.
- Whisk 2nd egg and vanilla, scrape down sides and incorporate completely.
- Add dry ingredient mixture to wet and stir with spatula till combined. Stir in chocolate chunks. (If using chocolate bar, break into pieces with handle of wooden spoon.)
- Chill to firm at least 1 hour in refrigerator.
- Preheat oven to 375.
- Remove from refrigerator, roll into balls (I used a small ice cream scoop), and place 1/4 in. apart on parchment paper on cookie sheet.
- Bake for 10- 12 mins, remove from oven and allow to rest on cookie sheet for 5 mins, then remove to cooling rack.
- Allow to cool completely or enjoy warm!
