Snickerdoodle Fat Bombs
I am looking forward to the start of this semester, a month out of classes has made me feel a bit stir crazy! I am ready to get back into my routine of class, studying, meal prepping, training, and doing my thing!
If you are looking for a great pre workout bite or anytime snack, this is it! I don't know of many people who don't like RX bars, but this is comparable and even better homemade! Not only do you control whats in it, but you get a cheaper version of this great snack! I absolutely love these and they are so easy. My food processor was the best gift I've ever received, before I used a small Ninja blender which was comparable, but it was sometimes too small.
I hope you all enjoy this recipe, you can substitute any nut/nut butter and if you don't have almond meal, you can take oats and pulse in a blender before you begin to make your own. I personally like a "seedy-ier" snack, so leaving the oats whole will work as well. Let me know if you give these a try and and add ins you try!
Ingredients:
2 medjool dates (soaked)
2 Tbsp coconut butter
1/3 cup pecan/almond butter
1/2 cup pecans/almonds
1/3 cup pumpkin seeds
1/2 Tbsp water
1/4 cup almond meal (almond flour)
1/4 tsp cinnamon
2 tsp vanilla extract
1 Tbsp pure maple syrup
1 cup shredded unsweetened coconut
2 Tbsp hemp hearts
How to:
- Add all ingredients to food processor/blender and pulse on and off for 30 secs, scrap down the sides and repeat till fully incorporated.
- Refrigerate for 30 mins, remove and roll into balls.
- Store in refrigerator in a closed container.
