White Bean Valentine Blondies
Can NOT believe this crazy weather, I'm hoping everyone stays safe this week! I tried this recipe from the latest Costco Connections magazine with some substitutions with what I had on hand and they turned out amazing a couple of weeks ago. I decided to whip them up again for the holiday of love this week! These are delicious and are a great way to get some additional nutrients in a dessert! I cut mine into squares and store in the refrigerator, I personally like chilled desserts, but they are counter safe in an air tight container too. These would be a great break room snack for all to enjoy!
Ingredients:
1- 15 oz can cannellini bean/white beans- rinsed & drained
1/2 c old fashioned oats
1/3 c brown sugar
1/2 c creamy peanut butter
1/4 c almond flour (can sub all purpose)
2 Tbsp our maple syrup
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1/2 c raw almonds
1/4 c dried mulberries- roughly chopped
1/2 c mini chocolate chips
How to:
Preheat oven 350 degrees, place all ingredients except mulberries & chocolate chips into food processor & process until smooth (30 seconds, scrape down- continue until smooth & completely combined.
Fold in mulberries & chocolate chips.
Spray a 8x8 baking dish and spread evenly.
Bake 20-25 mins or until you can remove a toothpick clean.
Cool & cut into squares.
