Banana Nut Oat & Seed Bars


Summer class has started and the next six weeks are going to be jammed packed with biochem and studying. In need of a snack (the usual), I headed to the kitchen last week and had two sorry looking bananas on my counter and I wasn't in the banana nut bread mood, so I decided to try my hand at some fruit, nut, and seed bars. I used what I had on hand and it turned out perfectly. If you've ever made banana PB balls, this is a gown-up version with a lot of great fiber, nutrients, and delicious taste all packed into one bar. Best part is that you can cut them or form them into whatever shape you wish. I use these as a pre-workout/run snack or can be taken on the go for a snack during the day as well.

Best part of this recipe is that there is no right or wrong way to do it and you can add a ton of fun ingredients as well to include, but not limited to; mini chocolate chips, head hearts, coconut flakes, maple syrup, Stevia flavoring, granola, cereals, additional nuts, caramel chips, goji berries, dried fruit- the possibilities are endless, get creative!

Ingredients:
2 ripe bananas
1 cup oats
1/4 cup mixed nut butter
3 Tbsp milled flax
3 Tbsp chia seeds

How To:
Place bananas in a medium sized bowl and mash till smooth.
Next, add all other additional ingredients, once combined completely add to a square pan/dish (I used a Pyrex container) with a lid is desirable, but you can cover with foil to store as well.
Place in the refrigerator for at least 2 hours, the seeds and oats soak up some of the liquid and firm up. Then slice into bars and enjoy!
