Cinnamon Quinoa Steel-Cut Oats
If you follow me on IG you know how deep my love goes for oatmeal. I eat oats at least 6 days a week for breakfast, nothing fills me up like it. After seeing a recipe shared in Kroger's mymagazine where they added quinoa to their oats, I was inspired. I went to purchase some more old fashioned oats this past weekend and decided to buy some steel-cut oats which I've had before and are always a bit heartier- perfect for chilly fall mornings! So during meal prep this Sunday I decided to make a combo with both steel cut and red quinoa. I love this recipe because you can make a TON prepped and ready to go. The reason it's great to do for meal prep is that quinoa and steel cut oats are a bit more time intensive as compared to traditional old fashioned oats during preparation. This recipe is so cozy and delicious and I have been enjoying it all week. Hope you give it a try!
Ingredients:
4 cups water
1/2 cup rinsed and drained red quinoa
1 tsp coconut oil
1 cup steel-cut oats
1/2 Tbsp cinnamon (I love cinnamon so I used 1 Tbsp)
pinch of salt
1/2 cup milk
How to:
Place quinoa in a mesh strainer and rinse to illiminte the bitter after taste.
Add water to a to a pot along with a pinch of salt and turn on high heat till boiling.
Meanwhile, heat the coconut oil in a pan over medium heat. Add oats and stir around to toast slightly, about 2 mins.
Add quinoa and toasted oats to boiling water and reduce heat to simmer. Simmer uncovered for 30 mins, stirring frequently. Steel-cut oats and quinoa should be a bit chewy, add milk and turn off heat. Serve immediately and top with fresh or frozen fruit, add a Tbsp of brown sugar, maple syrup, or even more cinnamon!
Favorite toppings include seeds, fried fruit, my homemade nut butter (Homemade Mixed Nut Butter recipe: here if you are interested in making it), coconut flakes, granola, pumpkin, sliced almonds, etc.
