Pecan Oatmeal Raisin Cookies


Christmas is almost here & I've been soaking in all my time off since graduation. I have seen all the kiddies this week, besides the ones that live in Cali. It filled my cup, there's truly nothing better than spending time with the family. I made these this week and the kids and my parents loved them. Chris insists that oatmeal has no place in cookies, yet he managed to woof down about four of them in one sitting- I think he approves. These are awesome to have with a cup of hot chocolate or coffee, great way to start my day a few times this week.
Ingredients:

1 1/2 cup raw pecans
2 sticks butter-room temp, softened
1 cup dark brown sugar
1 cup granulated sugar
2 extra large eggs- room temp
2 teaspoons vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 cups old fashioned oatmeal
1 cup raisins

How to:

Preheat oven to 350 degrees
Place pecans on a baking sheet and roast for 5-7 mins to loosen the flavors and oils inside.
Remove and allow to cool, chop coarsely and set aside.
In a large mixing bowl beat butter and sugars until fluffy and light. Add eggs one at a time until just mixed, then add vanilla and mix until combined.
In a medium sized bowl add flour, baking powder, cinnamon, and salt and sift. Slowly add dry mixture to wet until combined, don't overtax, this will produce a toucher cookie.
Add oatmeal, raisins, and pecans and mix by hand until distributed evenly. Place rounded balls of dough 2 inches apart on parchment paper lined baking sheet, flatten slightly on top of each.
Bake 12-15 mins until just lightly browned on edges and top. Remove from oven and allow to cool on pan for 3-5 mins, then transfer cookies to baking rack and cool completely.

These were a hit with client and neighbors this year. I love a perfectly sweetened, not too soft oatmeal cookie and these were perfect. Hope you all enjoy!
