Roasted Cinnamon Apple Oats


Good morning all! I'm over here trying to just stay warm and keep sunny thoughts running through my mind daily. My apple consumption has been booming this season and I've missed it. A warm toasty bowl of sautéed apples and oats has been my jam this month! I'm loving all the ways to add apples to my usual meals to include on top of salads, as a quick portable snack with nut butter, and like the one I'm sharing with you all today.

Ingredients:

1/2-1 small apple diced into cube sized pieces (gala, fuji, or preferred)
1 tbsp butter
1 tsp cinnamon
1/2 cup old fashioned oats
1 Tbsp milled golden flax
1 Tbsp chia seeds
1 Tbsp hulled sunflower seeds
1/2 cup milk

How to:

In a saute pan add butter over medium heat to melt, add diced apples, and sprinkle cinnamon on top. Cook through for 2-3 mins, turn off heat and allow them to remain in the pan.
Next in a microwave safe bowl add oats, flax, chia and sunflower seeds, and milk and mix. Microwave for 2-3 mins till heated through. Add the sautéed apples to the oats and enjoy.

I of course topped with additional cinnamon and a bunch of crunchy goods. I added flax flakes, hemp hearts, pecans, sugar cookies peanut butter, and granola.
