Banana Chocolate & Peanut Butter Chip Oatmeal Cups
Good Morning all, who's ready for a freshen up on their breakfast game? This recipe is so yummy, nutritious, and also great for those looking for a meal prep options that's portable and storable in the freezer for up to 3 weeks! I made these and pulled out for breakfasts on the go over a period of a month and they were awesome. I loved that I could add them to some eggs and bacon or even pop in the microwave for 30 seconds or so as a snack topped with my homemade nut butters can be found: (Homemade Chocolate Almond & Cashew Butter here or Homemade Mixed Nut Butter here ). Ingredients: (12 servings)
1 medium ripe banana-mashed
2 cups chocolate milk
3 cups old fashioned oats
4 Tbsp Manitoba Milling Ground Flax
1 tsp baking powder
1/2 tsp sea salt
2 tsp maple syrup
1 cup PB chips & chocolate chips (1/2 cup each)
1/4 cup brown sugar
How to:
Preheat oven to 350 degrees. Spray a muffin baking tin with non-cook spray.
In a large mixing bowl, whisk together mashed banana and chocolate milk until smooth.
Mix in remaining other ingredients until combined.
Evenly divide the oatmeal mixture across the greased muffin tins.
Bake for 25 mins until firm.
Let oatmeal cups cool fully before removing them from pan.
