Sweet Potato Stuffed Peppers


I have come into a substantial amount of sweet potatoes as of late and I have been using them in everything. I planned on making stuffed ground turkey peppers last week and decided, why not add them and only half the amount of rice. I gave it a go and they turned out amazing. It was a nice way to mix in some great carbs to this low carb recipe. The sweetness was a great way to mix in some variety to a traditional favorite. 

Tip: Be sure to dice sweet potatoes in very small pieces to ensure they cook through thoroughly. 



Ingredients:

6 bell peppers
1 medium sweet potato- diced 
salt & pepper 
1 lb ground turkey
1/2 chopped yellow onion
1 can (15 oz) diced tomatoes- drained 
1/2 cup cooked rice/grain of choice
1 tsp salt
1 tsp Italian seasoning
1 clove garlic-minced
3/4 cup shredded cheddar cheese

How to:

Preheat oven to 350 degrees. 
Begin by cleaning both sweet potatoes and peppers. Once sweet potatoes are cleaned dice into very small pieces and add to a frying pan with 1/2 tsp of olive oil, sauté for about 10 mins on medium heat, seasoning with salt and pepper.
For peppers, remove tops and core out center. Reserve pepper "tops" to dice up, these will be added to mixture for inside. 
Move sweet potatoes to the side and add 1 additional Tbsp of olive oil in same pan and add onions, diced pepper tops, and garlic, cook till fragrant and remove both sweet potatoes and onion and pepper mixture. Then add ground turkey to same pan with salt and Italian seasoning. 
Once ground turkey is fully cooked (drain excess liquid if needed), then add both sweet potato mixture and onions and peppers to combine completely. 
Next, place all cooked ingredient to a bowl and stir in shredded cheese until combined. 
Fill hollowed peppers and place standing upright in a bake safe pan/dish. Cover with aluminum foil and bake for 45-60 mins until peppers are crisp and cooked through (not mushy). 

** Top with an additional sprinkle of cheese for the last 5-7 mins if you'd like!
