Homemade Pico De Gallo


I'm ready for summer, we just grilled out last week for the first time this season and it just hit me in all the right ways. I'm jonsing for sunshine, warm breeze, and what all the foods summer have to offer. I'm finally starting to feel better after being sick and can't wait to spend some time outside. Today I'm sharing a quick, simple, and delicious pico recipe that you can use in so many ways. It can be used with chips, on top of nachos, layered dips, tacos, enchalatas, burritos, fresh scrambled eggs, etc. This is always a great recipe to have in your back pocket for cookouts, get togethers, or to ad a fresh spin to your dinner!


Ingredients:

3 or 4 tomatoes on the vine
1/4 large white onion
1/4 cup chopped fresh cilantro leaves (tender stems can be included)
1/2 jalapeno, seeds removed- finely diced
1/4 tsp sea salt
juice of 1 lime (about 2 Tbsp)

How to:

Coarsely chop tomatoes and onion. Place both in a medium bowl. Add cilantro, jalapeƱo, salt, and lime juice.
Toss till combined.
Serve with tortilla chips and enjoy!
