Homemade Easy Pesto


I know summer months often mean lots of barbecues and quick cooler meals, but having a bowl full of pasta just sounded amazing this past weekend. Normally I get this awesome Kirkland pesto, but this time I decided to make my own. I headed to the store picked up some fresh basil, spinach, and lemon and I was all set! I paired this bowl with a nice glass of my favorite white wine from Mouton Cadet which was a great way to end my weekend! This is a simple recipe that I found in the Costco magazine last year & decided to add some hemp hearts and nutritional yeast for a bit more flavor. Check it out below.

Ingredients:

2 cups fresh basil (packed)
1 cup fresh spinach
1/4 cup raw cashews
1/4 cup hemp hearts
1/4 cup olive oil
2 Tbsp nutritional yeast
1/4 tsp sea salt
1/4 tsp ground pepper
1/4 tsp apple cider vinegar
1 lemon- squeezed
few Tbsp water to loosen

How to:

Mix everything in food processor, stopping once or twice to scrape down sides to ensure thoroughly blended.
Then add it to fresh pasta. gnocchi, or zucchini noodles.

Here I added it to Banza chickpea pasta, chicken sausage slices, sun dried tomatoes, roasted brussels sprouts and zucchini quarters. So yummy and filling, I made enough for at least 4 other meals this week. I start my internship a week from today and I can't believe it's already here. I'm so excited and nervous.
