Peanut Butter Oatmeal Cookies


Good Monday morning all! Happy last day of summer, how is it already fall???! This time of year always gets me so excited. This past weekend we pulled out all my fall decor and I got to decorate with cinnamon apple candles lit and the windows and doors wide open letting the sun stream in. What a wonderful feeling. I also went through my entire closet.... I have an entire room that is a 'closet' and purged many things that just don't fit anymore, or that I simply won't wear and don't need anymore. This is a nice way to donate & help reduce a little clutter and stress from my life. I also decided to make some delicious cookies that I haven't made in years. These peanut butter oatmeal cookies are super easy & turned out so soft and delicious. Another positive for this time of year is with these cooler temps, I am able to heat my oven more than once or twice a week like I avoid doing over the summer months. I bring on ALLLLLL the roasting. This weekend not only did I whip up these delicious sweet treats, but roasted some butternut squash, chickpeas, zucchini, baked salmon, and made my favorite lentil stew (you can find that here ). This stew is pretty easy & keeps the bones nice and warm. 

I'm rounding out my first rotation for my internship the next couple of weeks and will be moving from MNT to food service. I can't believe I start staff relief already. It's truly amazing looking back at all of he assignments I have completed up until this point. When intro week came, I looked at the long lists of assignments and felt so incredibly defeated right off the bat. But I took a step back, made a plan, wrote it down, and stuck to my timelines with taking it day by day. I really have come a long way & enjoyed every moment. As far as this recipe goes, make some up or save this recipe because they are so amazing and the combo or sweet and nutty is perfect! These cookies will be for snacks and desserts with my lunches this week, just a nice way to end on a sweet note. Hope you have a fabulous week all! 

Ingredients:

1 1/2 c old fashioned oats
1/2 c all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup (1 stick) unsalted butter at room temp
1/2 c peanut butter (I used crunchy this time)
1/2 c granulated sugar
1/2 c light brown sugar
1 Lg. egg 
1 tsp vanilla 

How to:

Preheat oven to 350°
Line two baking sheets with parchment paper
In a medium sized bowl whisk oats, flour, baking soda, salt, and cinnamon and set aside. 
In a large bowl beat butter, peanut butter, & sugars together until creamy (about 2-3 mins on medium speed. Next beat in egg and vanilla until just combined.
Slowly add the dry mix ingredients to the wet on low until just combined, do not over mix. 
Take a spoon or an ice cream scoop and place rounded balls of dough on baking sheet 2 inches apart.
Place oven and bake 10-12 mins until edges are golden and center is a bit soft.
Remove from oven and allow to cool on pan for 5 mins, remove to cooling racks.
