Christmas Frosted Sugar Cookie Bars
Is there anything better than a classic sugar cookie? Dare I say yes, with this amazing recipe for the holidays. I saw this recipe on Facebook from Will Bake for Books (cutest name ever) her recipe can be found here - and had to give it a try! Of course I put a holiday spin on it and these turned out so soft and of course I LOVED the icing. My favorite sprinkles are the nonpareils sprinkles. They have always been my favorite since I was little. I added them inside and on top for some festive color!
This recipe brings me back to a time when I was younger where we would spend a couple of days making cut out cookies for family and friends. It was a wonderful tradition, we would make this every year, but of course 2020 is the exception to just about everything. We are all missing those traditions this year, but it is for everyones safety. I have been making banana bread and drop cookies more lately so this was a nice change up. Ingredients:
Bars:
1/2 cup salted butter, softened
1 cup granulated sugar
1 large egg
2 Tablespoons sour cream
1 1/2 tsp vanilla extract
2 1/3 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup sprinkles
Frosting:
1/3 cup salted butter, softened
1 1/2 cups powdered sugar
2 Tablespoons heavy whipping cream
1 tsp vanilla extract
How to:
Preheat the oven to 375 degrees. Line a 12 x 5 pan with parchment paper for easy removal.
Cream butter and sugar until light and fluffy. Add egg, sour cream, vanilla and beat until completely combined. Next, fold in sprinkles.
In a separate large bowl, combine flour, baking soda, and salt. Once combined, slowly add flour mixture to wet ingredients until just combined. Do not over-mix, this will result in a tougher cookie bar. Empty dough into pan and press firmly down till level. Bake for about 20 mins or until just golden brown.
While bars are cooling, prepare frosting:
Beat butter and powder sugar until light and fluffy, this may take several mins. Add heavy whipping cream and vanilla and beat until fluffy. Once bars are COMPLETELY cooled, spread frosting over cooled bars, add sprinkles, and enjoy!!
