Blueberry Chia Seed Jam


This recipe is my JAM- pun intended! Jam is always amazing and so versatile it can be a topping for toast, waffles, and 'cakes of the pan' and is one of my favorite condiments. Today I want to share a super simple recipe that can be made with virtually any fruit whether canned, jarred, frozen, or fresh. Follow the same procedure for each. You can also get creative with your sweetener, I used maple syrup but you can also substitute that for honey, agave, or even brown or white sugar. Or if the fruit is sweet enough for you, omit any sweetener all together! The chia seeds are a great source of antioxidants, Omega 3's, iron, fiber, and calcium and give the jam a thicker and spreadable consistency! I'm currently in Alabama for school for the month and kind of wish I had this yummy option to add to my oats or onto of toast, but I'm hanging in there and I'll be back in my kitchen before I know it. Hope you all give this recipe a go. 


Ingredients:

2 cups Wyman's Frozen Mini Blueberries
2 Tbsp Nature's Intent Chia Seeds
1 Tbsp sweetener of choice (maple syrup)

How to:

Place frozen blueberries in a microwave safe bowl, microwave for 30-45 secs until warm. Smash blueberries to desired consistency, I like a bit of a chunkier jam so I just smashed mine a bit. 
Once "jammy", add chia seeds and sweetener of choice. 
Mix until consistent, serve on toast, in oatmeal bowls, on top of ice cream, or even on crackers as a nice snack. 
Store in a lidded air tight container in the refrigerator.
