Apple Crumble

I am so glad to be back at home after being gone all of January. I had taken a break from studying every second for the RD exam, but am now back at it and am hoping to test in the next month or so. The weather has been so bitterly cold here for the past week and looks as if it's going to continue. I wanted to share a cozy feel good recipe that warms and also just makes you feel good. We have really been stocking up on apples the past few months. They have a pretty long shelf life for a fruit and are a great source of fiber. Apples are very versatile, not only are they an easy gran-n-go snack, they can be cut up and topped with nut butter (my fav), diced and added to oatmeal, or even dipped in hot caramel for a yummy dessert. We had an extra bag that we had lying around and I decided I wanted to make a quick apple crumble for dessert one night. My dad's favorite is apple crumble and being that we were going to visit them that weekend I thought it'd be a great time to give it a go so that I could bring him some. It turned out perfectly and man was it good. I only got two pieces of it between my husband and what I saved for my dad. This is one of those recipes where if you have some apples that are just not that great to eat on their own or maybe they are on the more ripened side and you don't want to eat them because they are a bit soft- don't pitch them! Throw them in a dish and give this recipe a try, you won't be sorry you did. 


Ingredients: 

1 1/2 sticks butter- melted
1 1/2 cups all purpose flour
1 cup chopped pecans, reserve 1/4 cup for topping
1 cup lightly packed brown sugar
1/2 tsp salt
6 large apples cut into wedges
1/2 cup granulated sugar
2 tsp cinnamon
1/2 tsp ground ginger
1 tsp lemon juice

How to:

Preheat oven to 350 degrees.
Grease a baking dish, or spray with non-stick spray.
In a medium sized bowl whisk flour, pecans, brown sugar, and salt.
Stir in melted butter until sandy in appearance.
Add apples, sugar, cinnamon, ginger, & lemon juice to baking dish and toss.
Spread into an even layer. Next press crumb mixture on top.
Bake for 50-60 mins until lightly brown on top.
